They do. They bake them on wire pans to keep them from cross contamination of the oven floor. They also change their gloves, and use a separate blade for cutting.
For those allergic to gluten or with celiacs disease it will be cross contaminated. For a voluntary gluten free diet you are fine.
Please be warned: the GF crust is near useless, as they cook it in the same oven as the rest.
I LOVE their GF pizza. It's the best I've had so far.
