They do actually check everything that you bring into the park but my experiences that they don't restrict food and water but again like everything else they do expect that you're going to buy products there because they have rest restaurants or places to eat
You can take small bags and food only for small children. There's a lot of food for sale on the grounds of the visitors' center.
They do not check bags but they do expect you to buy food from there Kennedy Space Center is a very nice place I recommend taking the bus tours later in the evening or first thing in the morning you can see more Wildlife that way
We brought water. They search bags. Don't think you can bring food in because they want you to buy from there.
