It will be helpful to check the website since they have different schedules.
Their website states that they are open between 9 AM - 6 PM between August 13th and December 23rd. It also says "Kennedy Space Center Visitor Complex opens at 9 am EST every day of the year." There doesn't appear to be any specific exclusion for Thanksgiving or other public holidays :)
