Depends on how fast you drink beer around the world. I start off fast and slow down around Germany. So i suggest you get a park hopper ticket and come back to epcot everyday and try something new.
If it's you and another person you can hit it in a day, but with a big family you might be stuck between what and where to stop. If you don't have kids take it slow enjoy the food and drinks. If you do you might want to stop at some of the fun shops and main attractions like the frozen ride.
It is a park with a lot of looking around. World Showcase takes time to see everything. I always give it a day. Get fastpasses for Soarin at least.
You can manage it in a day with planning and fast passes but you'll need to do open to close. This park is more fun if you take your time. IMO
