As a former security host... Everyone goes through the screening devices unless you have a medical exemption or physical reason not to be screened. You only get screened further if you alert the detector or have something obvious that you shouldn't have. It's very fast and efficient. As for a list of prohibited items, it's on the website and in the information Disney sends you when you purchase your tickets. Any further questions you can ask Disney World reservation specialist or security upon your arrival.

Everybody 100% will be screened at security check points at the parks. Been this way for quite a few years now. You can bring in food and drinks, except alcohol and no glass unless it is baby food.
You either go through the metal detectors or get wanted. As for what is allowed on web site and at the park.
Lists are hung outside each park and you go through metal detectors. When we were there earlier this month masks also had to be worn in rides and in buildings, not sure if that's changed again or not, but should check to be safe.

Everyone goes through security and a scanner. Food, water, and everything a typical day would require are allowed in.
My wife and just came back from there a few days ago. We visited the Epcot center and the music buildings, there were no wand checks or security but the admission fees were as high as $110 dollars per person in some areas.
