They do have schedules for character visits as well. Visit with guest services and they can provide you with what character will be where and when.

Mickey is everywhere! In my experience, he & Minnie are always the last part of the parade. I saw him more times in Magic Kingdom, least was in Hollywood Studios. While I am in Animal Kingdom, i had a photo ops in a theme like Safari Postal Office. Just check the park you are in for his spots and schedules for photo ops. Enjoy!
They have different spots. But for sure at the Epcot Disney friend meet spot.
We did a meet and great with him at Epcot.

Mickey mouse is constantly appearing throughput Disney World. You are definitely bound to run into him. Also go to the performances at the castle. You will definitely see him, and he signs autographs and takes pictures after every show. Enjoy!
Mickey can be seen at character meals, in parades, in shows and at several places in every park. Just may have to wait in line.
