That's unfair and totally not even a question. Food was great, next time ask for a recommendation or if you know what you like and it's undercooked, tell them and I'm sure they'll sort you out. I doubt they're out to give you under cooked food, just let them know next time
Give them a chance to learn and grow. Many new restaurants struggle to find their comfort level.
