We've always made reservations but I'm sure they'll seat you with a wait. It's a pretty popular restaurant so I would make reservations

Early evening (5 PM) you should be fine, but as it gets later, they get much busier. You MIGHT grab a couple of seats at the bar if you"re lucky.
Happy Hour was no issue but pm time better to do reservation

Not required but recommended. As noted above the restaurant is very busy. Excellent food, I hope you love your experience there!
