The staff will make accommodations to your needs. Just emphasize if this is an intolerance, dietary choice, or celiac. Each of these will be handled differently. Depending on the type of soy sauce, or cross contamination with the fryer.
They hornor guests' request well.
As a good restaurant, I would be very surprised if they cannot accommodate a guest with strictly gluten-free needs. Call them, and let them know your needs, and I'm sure they will be able to help you.
You would have to call and ask them. But my bet is, they are not too familiar.
