Our Grandson is an agnostic but he and his wife are willing to let us, my wife and I, (we are registered Catholics) baptize our great-grandson. Is this possible and if so, what do we need to do to have our great-grandson baptized there?

The office will most likely ask for a notarized letter of permission from each of the parents if both appear of the birth certificate in order to baptize. Especially if neither of the parents will be present as it is one of the requirements. After you register and clearly let them know of your situation, if they ask for any additional documents its best you present them before so they can be verified by the office and you don't run into any issues the day of the baptism.
