What do you mean by normally? They require a reservation and its usually booked solid several days in advance. Plan to call 2 weeks before the day you want to go.
This is not a "normal" dining establishment. Hence it was rated #1 dining experience in Sac again this year. Think of it more like you are booking a show where the food and the chefs are the actors and the tables are the stage. It has a set start time and an intermission. They have a set menu each month I think (so check thst in advance), but they have lots of options on it, and if they really don't have anything that appeals to you (well then you didn't do your research) AND they will still figure something out with you.
