I have been held hostage against my will by gluten sensitivity and a gluten free diet for many years so I haven't given it much thought lately. If I remember correctly the pies and cinnamon rolls are made fresh locally... probably in house. Probably depends on the type of pie and if the fruit is in season. I don't know if they always use fresh fruit for the filling. I have breakfast there every Friday and so I'll ask a friend of mine that works there and update my post.
