I don't think boar's head is wild turkey but if you shoot one, they will process it for you.
Butcher shops can only process farm raised animals for sale to the public but if you bring in an animal you've hunted, they will process it for you. They may be able to order you a heritage variety of Turkey but it will be farm raised.
