It's not that they don't know how to break a $100. I believe they don't take it to minimize their loss in the slim chance someone gives fake money.
Saving there own butt
Alot of places won't break 100 these days even though it costs about half of that to eat out. They need to invest in the training and proofing for counterfeit 💰.
