We didn't have a reservation, we were there as they opened and were in quickly after they opened.
No might have to wait for opening available.
No reservations needed for the ice cream counter outside. I think you can also buy cheese there. Reservations are for inside (restaurant, etc.).
For anything but ice cream by the scoop which they sell to anyone outside. Be prepared for long lines though.
