The Kung Pao Chicken has a light sauce, however, the sauce is somewhat strong and flavorful. If you would like a milder sauce with lots of veggies and chicken, a good one would be Moo Goo Gai Pan or Almond Chicken. All of these are very tasty and healthy. There is no brown rice, but there is white rice and fried rice. If you have any further questions, I would just call the store.
Sesame Chicken is heavily sauced. I would expect the same sauce with a few dried chillies. The rice is white or fried.
Not that I have noticed, however I haven't looked specifically for that type of variation.
I have been to this place, i have not seen any brown rice. You can get healthy vegetable option entrees there
