There are tons close by, we stayed at a double tree a few miles away. This gave us room to explore outside the general mall area as well.

They're are lots, some even attached to the mall
Mall of america has a Radisson attached to it.
There are quite a few Hotels near the Mall! I stayed at Quality Inn at 814 Anerican Blvd. They have a Shuttle service that takes you to the Airport and Mall of America for Free!
