It may have been security issue as well. While all our lives are extremely busy we should always try to be out of eating establishments 10-15 minutes before closing because of all the work that goes into closing them. I have also noticed in the fast food industry if the customers aren't coming in they may close, unless they own it. Many people are given the discretion to close early if no customers. I do believe that establishments should stay open their posted hours. Another consideration for some restaurants is they will shut down the oven, or fryer or other cooking item that may require extra cleaning or maintenance and be unable to provide all items on the menu. I don't believe this is a consideration for Subway. Hopefully, your next visit will be better. You could always choose to spend your money elsewhere and not return.
She probably shut down early at her own discretion, maybe bathroom, extra work etc., sometimes they do that
