i have a stock 2000 tj except for some 31" A/t can i ride the trail no issues?

You should be fine

Should be good on the woods trail, the easy course, and possibly do ok on some of the medium course. Our stock tj did just fine with the 32s and open axles with a first time driver behind the wheel.
