Each day they bake fresh So if you are going in for some profiteroles go early when they just open for the day. You will find them in the glass case on the right just as you enter the front door of the restaurant. Lunch is served promptly at 11 and it fills up quickly so if you decide to have one after lunch you may want to order it before you eat lunch. If that is the only thing you are going for at the French bakery order at the counter glass case.
They do make profiteroles, but if you wait till noontime they will be completely sold out. If you ask Vargas (owner/baker) for a special order 3 or more he may set them aside for you. This is a great bakery and well worth a visit.
