Would a 2015+ WRX be fine out there?

I wouldn't recommend it. It will get around some places but it will bottom out a lot.

Would be very limited with where you could go. Most of this park is going to require far more ground clearance than you have. But there are areas you could play around, including the sand drags, and the main roads around the property.
