I don't know about holiday hours but I can say that if you walk at a normal pace and really look at stuff just the aquarium part will take over 3 hours.

My family of 3 spent the entire day going through the aquarium, museum, and bass pro. We took our time and ate lunch there. Lunch time seemed to be when the museum was busiest. We were there on a Sunday.
