I think they used to, but with the immense volume they put out, they now get flour from King Arthur Flour (Norwich VT). It's great flour! Also available in grocery stores all over the country

Yes they grind their wheat flour. The food is amazing! You can have 6 pancakes and they bring them out 3 at a time so you have fresh, hot pancakes. Expect a wait to be seated, though, as Polly's is very busy. You can browse the gift shop while waiting for your table. They have dining tables as well as counter stools. The view of the mountains is stunning. Enjoy!
