I understand your point. At least they are cleaning the floors. Some places are totaly dirty and nasty.....

If the lobby is open, they mopping the lobby does NOT happen. They have to wait until lobby is closed. Now if someone spills pop in one area, then yeah "safety" first and mop up area.
They are not supposed to be mopping while customers are eating in
