One person dining with us is gluten free, though only for vanity reasons - causes major & very apparent skin problems that are rather disfiguring. We told the server about the food allergy & were all fine. They seem very conscientious here about people's allergies, whereas nearly all of the local sushi options are off the table for that very reason of cross contamination - soy flavoring even where it isn't labeled, for instance, and all the sauces. Not as bad as your issue, but she just doesn't like to run around looking like a plague victim due to crosscontamination, even though it isn't life threatening, the skin thing is terrible and lasts about 10 days and makeup doesn't help. Anyway, they were hypervigilant here and even swooped in and saved me when I mistakenly went for milk-infused rice I'm allergic to. 😅
