According to their website all the milk from their cows goes to make the Farmstead cheese. The milk is a special 15% butterfat ice cream milk purchased from Reiter Dairy in Springfield. They do make all their ice cream in house.

The milk & cream we use to make our ice cream here is from Reiter Dairy in Spfld. They make a 15% butterfat ice cream mix for us that we freeze into our ice cream as we add the flavors, fruits, nuts and other ingredients using two batch ice cream machines (which are located in our first dairy store, the white building attached to the red barn near the road) - making 5 or 10 gallons at a time. Currently, all our milk that we produce is used in making our cheese.
