According to their tour the water is locally sourced in Hershey. They have a water filtration system that allows them to further process, refine, and even adjust the mineral content of their water. This allows them to create more authentic tasting beers by mimicking the mineral make up of water from different sources. If they want to replicate recipes from their original brewery in Harrisburg they can do so or even to replicate the water found in Germany for a more authentic taste.
