So i think it would depend on the day and what they decide to make that day. I myself, don't eat seafood, and one weekday we went and the buffet was primarily seafood items. We frequent pretty often, and while I'm not super familiar with a vegan diet, hot buffet options i have seen, that come to mind are spaghetti/tomato sauce, brown rice, (not sure if you can do mac n cheese but it's always there) hot mushrooms, steak fries, baked potatoes, sweet potatoes, a variety of veges (green beans, corn, california blend, carrots) red skin dill potatoes, mashed potatoes, fresh baked yeast rolls, tater tots, penne pasta (plain) tortilla chips, salad like you mentioned, potato salad, different soups... again sometimes these menu items are together, and sometimes they switch. There doesn't seem to be any rhyme or reason to what they have on the buffet that day. As for breakfast- we've only been twice but it seemed to be typical breakfast fare- pancakes, french toast, eggs, bacon, fruit, etc...
Not on the menu itself. There are some on the dinner buffet. I've never had the breakfast buffet.
