This would include a drug test, a very extensive background check and even a possible polygraph (lie detector) test. Certain departments within the casino may require you to have a minimum of 5 years experience in accounting or bookkeeping. You'll also want to make sure that your Microsoft Office and data entry skills are really sharp. For the food court, some experience in the fast food industry and some auctual culinary skills would be a good thing. Expect to be tested on your Sanitation knowledge and knife skills. Do a Google search to find out if you can get crash courses in some of the most common retail point-of-sales software.
