This is like chipotle on Baja. Honestly the Chimayo sauce is amazing the Chile tortillas are bomb! Chimayo is where my hometown is next to so it was cool talking with knowledge staff about the owners naming this place chimayo. Get the fish tacos!!!!!!!!

This place is INSANELY good! I grew up here and my family still comes to Chimayo at least once a month. Most things are pretty standard, but their fish and shrimp are the way to go. I exclusively get the Baja Fish, on anything! Tacos, burritos, bowels...the fish is SO good! This place is fast, made to order food. Great for any occasion like post ski or raft trip.

Their fish tacos were excellent. Someone recommended this place and we stopped after skiing and it was really delicious!! Fish was perfect the Chimayo sauce complimented it amazingly. Also ordered the Chile rellenó and loved it. Staff was nice and food came out quickly. Definitely coming back!
