New to Lacey Olympia, but love local butcher shops. The specials are on a chalkboard. Porterhouse 7.79 lb, it would be 21.99 a pound at Costco, if they even had it. Just cooked one tonight. Blueback Salmon, an evolutionarily significant unit if Sockeye, that many consider the top of the heap, 24.99 VERY REASONABLE for the best of the best. The freezer was fun as well, had to get some ground wild boar for an Italian dish I love to make. I can tell you there is zero chance I will be buying meat at any of the chains now that I have experienced Gibson's Meats.

I have never been one to make extra trips for different items, but it is totally worth it for Gibson's! The staff is always friendly and helpful, the meat is fresh, the selection is excellent, and the service is amazing. They'll answer all your questions about the cuts you're considering, provide custom cuts, and give you input on which cuts will work best for your needs. This is one local business that is worthy of your time and money. I will definitely be buying meat here for the foreseeable future!

Ordered a boneless prime rib, 5 lbs., recently for a nice dinner for family guests visiting. I've roasted numerous prime rib meals at home (rubbed the day prior, ambient for 3 hours before roasting, roast @450 for 25 min., then @325 at 15-18 min./lb.) After roasting this one and serving it, everyone at the table agreed that is was just awful; texture was tight, very rough to chew, flat taste, extremely dry and many of veins of tight string fat. This was NOT a prime rib (Choice) cut. Spent $70. After cutting away all the fat from remaining roast, I cubed up the meat and fed it to my dog a little serving at a time with her meals over several days. Worst "prime rib" I have ever purchased (doubt it was a prime rib).

I buy all my meats at Gibson's , I've tried other places and grocery stores . they just don't compare to the quality and service I receive at Gibson's.

Hello,. No we don't carry scrapes. We grind our own dog food blend with beef heart, bone meal, beef fat, and carrots. Although, we do carry a variety of organ meats, green tripe, etc. That you can purchase for your pet!

We only have frozen. It is cubed up in about 1×1 in squares. We package in 2-3# bags. We dont sell enough goat meat in order to keep fresh. If you wanted fresh you can put an order in a couple days in advance so its ready for pickup. Thank you.
