Yes, it is possible to choose the interface you want with a custom segment LCD. The lowest cost option is a 4:1 multi plex (25% duty cycle), I2C is possible, but not popular. SPI can be done by adding a controller.
At this time it is the ST7066 Controller
Most do and offer a parallel or SPI or LVDS interface. RGB has no controller and is lower cost, but more work to program
Yes, standard displays are in stock. Most contain a touch panel/screen of some type. It is possible to customize/modify TFTs to meet a customers need.
