I've seen people pay in cash, I paid my first few months in cash, but they still need your info.

You can't Planet Fitness has a strict policy where you have to give them a bank account number. It's the only way that they can reassure that they will get their money and you can't just cancel your membership anytime.. loophole around that would be start a separate bank account for just that just make sure you have the money in there each month..
