Food was okay. My husband asked the waitress for clarity about something on the menu and I caught her rolling her eyes at him. He doesn't explore a lot when it comes to food so this was a big deal for our family, not the best experience.

Yes ...two tables in the main dinning room are recessed - but you can also use the private rooms behind the rice paper screens - those are recessed as well and awesome , but you need to call them for their use and reservations.
I can't speak for downtime cleaning but masks are required of guests and staff (when not seated/ eating obviously) and most, if not all staff were wearing gloves. Seemed commensurate with any other restaurant functioning currently.
Walk in for lunch is fine. For dinner I would give a call just in case.
I don't believe there's a section labeled it but if you talk to the staff they might be able to make you up a vegetable dish without any gluten. They're very nice and accommodating
