Top blade...used as flat iron...tasty cut but must be cooked slow to break down the tendons, which produces the flavor...suggested method I use: lay meat seasoned with salt & pepper on a bed of sliced potatoes and topped with sliced onion...wrap tightly and cook 350° for 60 mins...it will melt in your mouth
