Head cheese needs more vinegar and pepper. Cut the ginger. Teriyaki jerki is excellent. Havn't try smoked pork hocks yet. Do I cook them? Thank you.

Loved trying the Jerky! You can tell they pay great attention to the flavor in their seasoned meats. Their Ribeyes were a great cut also! Can't wait to stop into the store for more!!
