There is no seating on the floor. There are stools at the bar to the side of the stage, and a few upstairs at the balcony. The crew there is nice. If you ask them to get you a seat and you are Sr Citizens, my guess is that they'll get you a couple if they can.

Yes, maybe once a year they might have a special event that's all ages.

I had to wear a mask when I was there a few weeks ago, and provide my ID, but no other verifications.

I'm not familiar with hotels in that specific neighborhood, but plenty within a reasonable cab or Uber ride. Once you get a downtown hotel room I would not recommend getting in your car and driving. while parking is not too difficult near JBs if you don't know the area you'll quickly become frustrated.

The bar is like a normal bar. Pay as you go. There are two bars. One in the restaurant downstairs and one upstairs in the music venue. The price range from $6-10 depending on the drink.
