Always best to make a reservation if possible. But if you didn't make one, don't let that stop you from going down there, getting a drink, and being seated in a few minutes. It can be more fun that way.

It depends on the context it's used. If your making a reservation via the app or website "Open Table" then it will reserve a table and time for you. However some restaurants (Not Fogo) will have multiple large tables in which multiple people who don't know each other wind up sitting with each other (Kind of like Kobe Steakhouse) OR Open Table could mean first come first serve; get here and get seated. OR I have no clue and I'm making all of this nonsense up flying by the seat of my pants after a meat coma care of Fogo de Chao~
