Brent knows his stuff! We are so sincerely sorry. When they bottled skim, dated 6/21, they did so after making cream (which is a big no no). There was still a little cream left in the filler and a small amount got into the skim. Over time it rose to the top of many bottles revealing its self. Cream is delicious in your coffee or when you're baking, but we do not want it in the skim milk. We offer a 100% guarantee on our product. I would imagine it's still while milk. From what I was told, the process creates smaller fat particles that are easier to digest for babies/infants as well as being better for cooking.
