Go early for the smaller crowd. They start to fill up about 12 for Saturday brunch. Bottomless mimosas with options for the juice was perfect because we all wanted something different.

One could make their own salad and they have a good amount of roasted vegetables. If I was vegan and having brunch at Sequoia I'd just order off the regular menu instead of doing the all you can eat brunch. The all you can eat brunch is amazing though...lots of seafood, charcuterie, cheeses, eggs pretty much any way you want them, etc., etc. If you go with doing the all you can eat brunch - I'm sure you'll have some nice options.
