You need go no further; this is the right place for eclairs. Other reviews for this location will tell you how amazing their eclairs are - they are 100% correct. Understated, even. We were looking for eclairs for my mother-in-law's 80th birthday celebration (eclairs are her favorite) and searched from Cache Valley to Utah Valley, sampling far too many mediocre eclairs - some from places that we expected to have very good ones. Our last stop was Carol's. No need (or option, really) to go further. Their eclairs are an order of magnitude better than the other bakeries'; truly in a class by themselves. Every element is perfect - Choux pastry, filling (Bavarian Cream - not whipped cream!) and chocolate icing. There is even an extra - a small frosting flower on top. These are simply the best. And the bakers are very friendly, too.
