Your best options are to call Disney directly or use the Shop Disney if you are looking for a specific item.
They usually can do the embroidery in just a few minutes. I waited about 15 minutes for others in front of me my last visit.
When I was here a few months ago, this location did have Oswald ears and the do all the fun lettering.
