Each variety has a distinct color and flavor and comes from a different set of floral sources as we go through our honey season. We often are able to provide black locust, basswood, summer wildflower, and bamboo/goldenrod. They are all worth a try for different uses!
Our honey goes from the hive, to the extractor, through a strainer (nobody wants bee legs in their honey) and into our bottling tanks. We don't add to our honey and we minimally heat it just so it will flow into a jar. Raw is an odd term... our honey is never "cooked."
