We unloaded the canoe here from Silver Springs and rode in the van back. It was pretty convenient but the water was no silver springs. Quite dark

There is not. They are probably small springs along the river, but you won't see them. When you hit the river from launch, turn right and go five miles to get to head springs. You can't get out of boat once you are up there though. Beautiful though.
No, I do not believe that you can rent kayaks. We were there recently (during the week) and there were no employees. Just a sign on the "entry shack" indicating that the $5 entry fee was on an honor system.

No, you can't overnight at the boat ramp or at Silver Springs. There is a campgroind across the Ocklawaha bridge- Wilderness RV. They may have dockage available.
The park closes at dark boat ramp river access is open 24/7 so fishing I would say yes you can fish there as long as you have proper fishing license
No gate there everytime I have been it is a paystation box. So bring cash and a pen.
You could go to the head springs, Silver Springs.
No camping. But plenty of primitve camping in the forest nearby
