I came here yesterday to get a new driver's license since I just moved to North Carolina. I was in and out in like 30 minutes without an appointment so I was very happy about this. You don't have this fast service in California. But what I didn't like about my experience here is that if you pay with cash, you have to have exact change since this office doesn't give change for some reason while the license plate office does. Good thing I had enough money in my checking account to use my debit card or else I would have had to go get change and return to the office. The woman who helped me was respectful but wasn't personable at all and seemed like she didn't want to be at work. But I'm not mad about it. Maybe she was just having a bad day. It happens to all of us. It was a good experience coming to this DMV office.

I moved to NC from Ohio and had to take proof of residence, title for vehicle , proof of insurance and get my NC license and the title for vehicle changed to NC...Not a hard process, morehead city office is alot better than havelock.

You can walk in, but you may have to wait outside the building for those that have made appointments. We got IDs last week and only waited 10 minutes. The line got longer though by the time we left. So it's hit or miss, I think. Masks are mandatory, so don't waste a trip by going without one.
Plates are at a different place. And if you want your license to be a REAL ID you'll need more documents.

It is easier for the examiner if she has a birth certificate, or social security card but it is not necessary. You wife is an established NC client so we can verify who she is by asking personal questions. She can also order a duplicate online at ncdot.gov/dmv.
You can make appointments for some things, you're best bet is to call the dmv you're going to and find out for certain.
