If I freeze your stuffed shells, should I defrost them when I'm rrrady to bake or should I cook in it's frozen state? If so for how long? Tk u!

With a few exceptions, it's not recommended to put frozen food straight to the oven. I would recommend you to let the shells defrost before you put it in the oven. Good luck.
