Meet the master of meat. One of the last true to his trade. An actual, in the flesh, butcher. While they have delicacies such as venison, duck, a variety of other meats, perogies, and other delites in a freezer case, the butcher will hand cut to your specifications your choice of steak, beef, pork, you might imagine it, he'll get it for you. There is fresh chicken, and other items in the refrigerated case. A nice selection of rubs, and spices you haven't seen before. I asked for three porterhouse steaks cut to an inch and a half. I asked the butcher for his advice on the prep of the steaks. I was told to take them out of the fridge an hour before searing them in a cast iron pan, and then broiling them. I bought a bottle of rub recommended for a light sprinkling before the steaks went in the broiler. The one piece of advice the butcher forgot to give me was, "You are going to need three platters for these steaks, plates won't be big enough." Put your orders in before the Super Bowl. Time grows short.
