Charlotte, thank you for your inquiry. Our highest cacao percentage chocolate is 72% but there is an explanation as to why. The total amount of cocoa from the bean is included in the number you see on any package and this includes added cocoa butter. Cocoa butter is a fat that has more calories by volume than the sugar that would otherwise replace it. Cocoa butter is added to chocolate to keep it soft to the bite. Our 72% does not have any added cocoa butter and is actually a bit hard to the bite until it starts melting. Most 80%+ chocolates have a significant amount of cocoa butter added. I hope this helps.

We follow all recommended practices. In our Retail store we have sanitizer and wipe down all door handles, credit card machines and shopping baskets. We have marks on the floor and plexi dividers at the cash registers. We limit the number of shoppers as needed. In our Events, we have socially distanced tables and have revised our practices so there is now sharing of items, passing of samples etc. The only thing that did not change is the fun and learning!

Hector, thanks for reaching out. Yes, we do have real (100% cocoa butter based) white chocolate here. We do not do any confection pieces with white chocolate, just solid bars at this time, which are always available in our store and sell for $4.25 each. In certain holidays we do add some other forms of white chocolate pieces.

Our Chocolate Experience includes samplings and fun learning and each participant making a chocolate bar is $10. If an attendee does not want to make a bar it is $5.
