I've shopped at a lot of different places for flank steak and I've cooked a ton of them throughout the years.... I picked up a little over 3 pound "soft cut"... never heard that term before.... and I have a tried and true overnight marinade I use. I cooked this up to about 140 at the thickest part let it rest sliced it up...(across the grain) and there was not a single piece left over. Absolutely the best quality, texture, and flavor flank I've ever had. Run don't walk

i love this butcher shop! it has really good quality beef, people are very kind, and sometimes they even give you free samples of their beef jerky (which is the best i have ever had) i would really recommend this shop if your looking for some good meat.

Picked up some steaks here for dinner! Staff is always super helpful and friendly. The meat is always amazing. We picked a couple New York Steaks this time! Cash only so be ready to get out some green but you’ll also enjoy seeing the old school cash register!

Admittedly this is really the first butcher shop I’ve been to, but I’m impressed by their selection and the general vibe of the place and staff. Always friendly and helpful telling you how to cook your meat if you’re unsure. Been smoking a lot of chicken recently so it’s nice that they’ll cut out the spine and other unwanted bones for me, even season it if you want. Definitely recommend stopping in.

Mostly raw meat. However, I think they have smoked salmon.
Yes, They have fantastic prime-rib roasts. They sell it with or without the bone-in. I got great results with their pre-trimmed prime rib - they can tie the bones back on so it’s the best of both worlds. On request they will pre-season it for you as well, and it turns out perfect.
I have seen alligator and boar(I think) but not elk that I remember

Grass-fed and organic are marketing buzz words and you won't see them in this butcher shop because they don't believe in b.s. marketing. What they do have here is some of the highest quality beef I have ever seen or consumed here in the states or abroad. It is beef that is sourced responsibly and they inspect every single animal for health issues and sickness. They do not buy or sell low quality beef, period. That is their mantra. If you really want to treat yourself ask for the dry-aged New York or ribeye steaks. They don't keep them up front/out in the cases but they are the best steaks they have. Hands down.
