They have it all: good quality deli meats, charcuterie, and cheeses. The sandwich board is excellent. Then we get to the butcher counter with dry and wet aged steaks, small farm products for pork and chicken, too. I hate going there because I keep adding more and more to my basket.

Came here for the sandwiches. A little pricey but very good! Recommend the Italian and Smoked Brisket. Shop also has a good selection of condiments / sides.

I've bought bison steaks here before, always fresh and good quality. Had to try bison after reading a number of western gold rush era books , that got me interested . I can't believe bison is not more popular it's better for you ,it has less fat. I'm going there today an buy a rib eye, it's gonna be good along with watching the super goat and the little goat go at it on Superbowl Sunday...cheers ya'all !

Hi Christopher, I don’t know if anyone in the area breaking down the entire animal where the offal is fresh. I know of butchers breaking down from quarters and sides that’s it. We can get it frozen if you don’t find someone.

Hi Darcie, yes we do always carry the following cuts in 100% grass fed and grass finished beef; ribeye, tenderloin/filet, chuck and ground beef. It’s also only Angus breed. I recommend calling ahead to confirm your specific needs are available just to be safe.

none In stock in Brea, for the quantity you need I’d suggest pork belly as an option. We can special order back fat but you’d need to buy a Case and you probably don’t need all that.
I don't know what kind of "exotic meats" you are looking for. However they can order whatever kind of "exotic meats" you are looking for if they don't carry it on hand. My brother orders all sorts of "exotic meats" such as Ox Tail, Rabbit, Turtle, Bison/Buffalo... Etc... They're manager Nicole is very knowledgeable and great about customer service and has always taken care of customers needs.
We carry fresh Bison. Typically the ribeye is in stock. Call ahead just to double check availability if you’re driving far.

Typically have picanha cut in the case in CM. Also have rib cap when we can, plus all the standard cuts... rib eye — Ojo De Bife etc... w can bring anything in on request.
Yes we do. It’s made locally and we stock it at all locations. Like Derek said it’s a good idea to call ahead if you’re only going for one item... in case we had a run on chimichurri ;)
